Elderflower & cucumber gin cocktail dilled up

If you like gin, this little number is delicious. Tasting of melon but with no melon in sight, this lovely cocktail is easy to drink and wonderfully refreshing. It heralds that spring has finally arrived and it’s time to enjoy few lighter drinks in preparation for the summer. Yay!

Elderflower cordial muddled with fresh cucumber creates the crisp base complemented by the aniseed notes of dill whilst the gin topped up with tonic water lends that utterly delicious bitterness. Here is the recipe.

  • 5cm piece of cucumber cut into cubes
  • large sprig of dill and a smaller one for garnish
  • 40ml of elderflower cordial
  • 30ml of fresh lemon juice
  • 50ml of gin (I used Gordon’s)
  • tonic water to taste
  • ice

Place two martini or margarita glasses in the freezer 30 minutes before making the cocktail. When ready, remove from the freezer and place a small sprig of dill in the bottom of each glass.

In a shaker muddle the cucumber cubes with the dill for 1 minute or so. Fill the shaker with ice cubes. Add the elderflower cordial, freshly squeezed lemon juice and top up with the gin and a splash of tonic water. This will help to cool the cocktail quickly. Cover and give it a vigorous shake until nicely chilled.

Pour into the glasses, top up with more tonic water to taste and enjoy. Cheers!
